So I had some leftover chicken from the other night and I hate to see such yummy food go to waste. Enter my cheesey chicken panini – the best way to use up those leftovers without anyone ever knowing! You will need:

Leftover protein of any kind – chicken, steak, tuna, lamb. Doesn’t matter how it’s flavoured, as long as it’s tasty!
Panini bread (or any bread)
Mayonnaise to taste
Pesto
Red onion
Cheese of your choice
Additional toppings (optional) eg. jalapeños, tomatoes, pickles
1. Shred your protein and mix with a spoon or two of mayo to taste (mix with half mayo/half yogurt for a lighter calorie option). 2. Slice panini bread in half and spread a layer of protein mix on one half, and top with toppings of your choice eg. tomatoes, jalapeños, pickles.
3. Spread pesto on the other half of the bread (optional), close lid over and grill on a griddle pan for 6-8 mins or until cheese is oozing and melted.
4. Serve warm with salad and/or fries. °
