My no-prep lunch is the easiest, tastiest and healthiest way to fill up and stay fuelled throughout the day. Made with green leaves, baby plum tomatoes, sliced peppers, halloumi and @sainsburys maple and thyme hot smoked salmon slices, it was a complete win and was assembled within minutes. If you pre-cook the halloumi and leave a batch in the fridge (it only takes a couple of minutes!) you can throw it in to salads every day of the week for a flavour boost when you need it. Low carb/keto and bursting with nutrients, it’s a brilliant little lunch box idea and also makes a beautiful light lunch for guests. It’s one of those versatile dishes that requires minimal effort but delivers on taste every time. Give it a try, there’s virtually no cooking involved!°
